Cypriot and Turkish cuisines overlap a lot. Even their language is the same. These kubba are actually more of a croquette, stretching 250 grams of minced meat to a meal feeding 4 to 6 people.
Ingredients:
1 kg potatoes
250g ground meat
1 onion
1 egg
5 Tbsp ofbread crumbs
1/2 cup chopped parsley
1 tsp salt
1/2 tsp dried mint
1/2 tsp cumin
Oil or frying
Method:
Peel the potatoes and grate with the fine side of the grater.
Squeeze the juice of the grated potatoes well and put them in a mixing bowl.
Add the minced meat, egg, bread crumbs, grated onion, spices, salt and finely chopped parsley and knead well with your hands.
The consistency of our meatball mixture may vary slightly depending on the amount of potatoes we use. If necessary, you can add some breadcrumbs.
Take a small piece of the meatball mixture we prepared and shape it by rolling it with your hands. If you moisten your hand slightly at this stage, the meatballs will easily take shape without sticking to your hand.
Pour plenty of oil into a deep frying pan or pot.
After carefully checking whether the oil is hot or not, start frying meatballs.
Put cooked meatballs on a plate covered with paper towels to absorb excess oil.
Our Cyprus kubba are ready to serve hot.
