1896. Cornflakes Chocolate Cake


This is a simple cake, soaked in chocolate milk, and covered in a chocolate ganache with cornflakes in it.



Ingredients:

For the cake:
1 egg
½ cup sugar
1 tsp vanilla
¼ cup melted butter
¼ cup cocoa powder
1 cup milk
1 cup flour
2 tsp baking powder

For the chocolate milk:
1 cup milk
2 Tbsp sugar
1 Tbsp cocoa

For the ganache:
200g semisweet chocolate
200g whipping cream
2-3 cups cornflakes




Method:

To make the cake: Whisk all ingredients until a batter is formed; do not over beat. Prepare a square tin with parchment overhang to allow easy unmolding later. Bake at 350F for 20-30 minutes. Let cool completely.
Heat the chocolate milk ingredients in a saucepan. Use a chopstick to poke holes in the cooled cake. Pour hot chocolate milk over the cold cake.
Make the ganache by heating the cream until hot, add the chocolate and stir until melted in and combined. Pour a bit of the sauce over the cake. Add cornflakes to the remaining ganache and spread over the cake. Let set 1 hour in the refrigerator before removing from the mold and serving.
