Be sure to choose a lean cut of meat as fat does not dehydrate fully and affect storage time.
Ingredients:
500g tenderloin
1/4 cup soy sauce
1/4 cup Worcestershire
1 Tbsp honey
1 Tbsp chipotle spice mix
Method:
Thinly slice your beef. For chewier jerky, slice with the grain. For a more tender jerky, slice against the grain. Mix the marinade ingredients in a bowl until honey incorporates.
Add in the beef and ensure it’s fully coated. Refrigerate for ~6 hours or overnight.
Drain and add into your dehydrator 167F/75C for 4-6 hours depending on thickness and how you like your jerky. I ran my dehydrator longer than 6 hours for a crisp jerky.
