1908. Digestive Lemon Bars


Taking a shortcut by making these lemon bars from digestive biscuits, they quickly come together for a minimum effort flavorful treat. 
Do note that they need to be kept chilled to maintain their shape.


Ingredients:

1 cup sweetened condensed milk
200 g butter melted
400 g digestive biscuits
Zest of 2 lemons

Lemon Icing:
2 cups icing sugar
20 g butter softened
2 ½ Tbsp lemon juice



Method:

Blitz the biscuits in a food processor to a powder. Pour in melted butter, sweetened condensed milk, and lemon zest, then mix again until well combined.
Press the mixture into a lined square or rectangular dish and smooth it out evenly. Chill in the fridge while you make the icing.
For the icing, whisk together the icing sugar, butter, and lemon juice until smooth. Pour over the chilled biscuit base and spread evenly. Return to the fridge until set. Slice and serve chilled.
