1914. Blueberry Chia Yogurt Pudding


I make my own yogurt weekly using two litres of milk. I then strain it to get 1 kilogram of greek yogurt, and about a litre of whey. To make this blueberry chia yogurt pudding, I thin it out a bit using the whey. If you are making it all from store bought ingredients, just use milk, which is what I've put in the recipe below. Makes for the perfect weekly breakfast meal prep.


Ingredients:

1 kg Greek yogurt
2 cups blueberries
1 cup chia seeds
1/3 cup honey
1/2 cup milk


Method:

Cook the berries down to a mash, then puree using a hand blender for a smooth finish. Mix this puree with the rest of the ingredients and cover and refrigerate overnight. The mixture will appear watery but will thicken significantly overnight in the refrigerator. Serve chilled with extra fresh fruit topping.
