Roasted chickpeas make for a light and healthy snack.
Once cooled, they become so crunchy, they can easily rival popcorn.
Chickpeas are naturally mild in flavor, so you can really flavor them with whatever spices you want, from simple salt and pepper to more complex combinations.
1 can chickpeas
1 Tbsp olive oil
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp paprika
1/4 tsp white sugar
1/4 tsp salt
1/8 tsp black pepper
1/4 tsp lemon salt
Drain and rinse the chickpeas, then lay them on paper towels to dry.
Preheat your oven to 425°F and mix up your spice mix.
Toss your chickpeas in a bowl with the olive oil and the spice mix until coated.
Spread in an even layer on a lined baking sheet.
Bake for 30 minutes, tossing half-way through to ensure even cooking.
Let them cool before snacking.
