821. Peach Ice Tea

If I had to choose my favorite iced tea, it would be the fresh lemon iced tea. However, iced tea varieties are just as endless as lemonade varieties, and deserve being explored.
Peaches in the height of Summer are in abundance and you need to get creative in using them up. Eating them straight up or making jam will only take you so far. This peach iced tea is a refreshing drink best chilled and served over a tall glass of ice. A concentrated syrup if first made from the peaches, which is then diluted in cooled brewed tea. If you prefer an added tang to an all-sweet drink, feel free to add the juice of a fresh lemon.


1 1/2 cups chopped peach
3/4 cup sugar
3 tea bags


Brew the tea bags in one liter of water; set aside to cool.
Simmer the chopped peach, sugar, and one cup water for 15 minutes, mashing once soft.
Set aside for 30 minutes to cool down and further infuse, then strain and discard the solids.
Combine the peach syrup with the cooled tea and chill until ready to serve.
Serve over ice with wedges of fresh lemon and fresh mint leaves.

شاي مثلج بالخوخ

1 1/2 كوب خوخ مقطع
3/4 كوب سكر
3 أكياس شاي

تنقع أوراق الشاي في لتر ماء مغلي ويترك جانباً ليبرد.
يغلى الخوخ على نار هادئة مع السكر وكوب ماء لمدة ربع ساعة، ثم يهرس بعد أن يلين.
يترك الخوخ المهروس جانباً لمدة نصف ساعة حتى يبرد ثم يصفى.
يصب عصير الخوخ على الشاي ويترك في الثلاجة حتى وقت التقديم.
يقدم مع الثلج ويزين بشرائح الخوخ وأوراق النعناع الطازجة.
