I did not plan for this week to be themed minimal ingredients, but here it is!
These two ingredient oreo truffles are decadent and moist, and are a joy to have with a steaming mug of tea or coffee.
I drizzled some chocolate over the truffles, but you can either forgo that, or dunk the truffles completely in chocolate to give them a firm outer crust.
Lorraine Pascale coats them in white chocolate and then sprinkles them with funfetti, a beautiful visual contrast indeed!
Ingredients:
300g oreo cookies (about 28 cookies)
150g cream cheese
Method:
Blitz the oreos in a food processor until finely ground.
Add the cream cheese and blitz again until a sort of dough is formed.
Refrigerate covered for about an hour until the batter has firmed up.
Form balls from the batter, I got about 32 balls.
Refrigerate until ready to serve.
If coating in chocolate, consider freezing for about half an hour before dunking, so they will be really firm and not give you a hard time.
