Sandwich wraps are great because they make you feel almost virtuous that you've avoided all the fluffy white bread of a baguette or bun.
This wrap is filled with four different components, all of which are delicious and healthy on their own, but make for a bang when combined. We have the spicy-marinated steak, seared and sliced; tomato-onion salsa; an amazing mix of creamy avocado and feta cheese, all topped with some lebna or greek yogurt (you could do sour cream too).
Ingredients:
For the steak:
2 steaks
1 tsp paprika
1/2 tsp chilli flakes
1 lemon, juice
1/2 tsp salt
For the salsa:
2 tomatoes, chopped
2 spring onions, chopped
1/2 tsp salt
2 Tbsp vinegar
For the guacamole:
2 ripe avocados, chopped
1/2 cup feta, crumbled
1/4 cup chopped coriander
1/2 lemon, juice
Lebna or sour cream
4-6 tortilla wraps
Method:
Mix all the steak ingredients and let marinate 1 hour at room temperature or a couple of hours in the fridge.
Heat a griddle pan until very hot.
Sear the steak a couple of minutes on each side until cooked as desired. Set the meat on a plate on the side to rest.
Combine all the slasa ingredients and set aside.
Combine all the guacamole ingredients and set aside.
Slice the steaks after they have rested.
Assemble your wraps: warmed tortilla, steak slices, feta guacamole, tomato salsa, and a dollop of lebna.
Wrap and consume immediately.
