Hearty kale salads took precedence over other salads for a time. This replica of the Cheesecake Factory's superfood kale salad was something bound to happen since we order it every single time we visit the place.
Much simpler than expected, it combines thinly shredded kale with cooked and cooled quinoa, roasted sunflower seeds, and fresh plump grapes. The lot is topped with freshly grated parmesan cheese. If you have candies lemon strips on hand, this is the time and place to use it.
Ingredients:
1 1/2 cups cooked quinoa*
5 cups kale, thinly shredded
1 1/2 cup red seedless grapes, sliced in half
1/2 cup roasted sunflower seeds, unsalted
1/2 cup grated parmesan cheese
For the dressing:
1/4 cup lemon juice
1 tsp honey
1 tsp dijon mustard
1 tsp salt & pepper
1/2 cup olive oil
*from half cup dry quinoa
Method:
Blend all the dressing ingredients together; set aside.
Add shredded kale to a large bowl. Add remaining salad ingredients and combine. Make sure the cooked quinoa and roasted sunflower seeds are completely cooled. Finish off with the freshly grated parmesan cheese.
Dress salad just before serving.
