Super simple, this fragrant rice would elevate any dish it accompanies. Contrary to initial belief, the cardamom is in no way overpowering, and at one teaspoon per two cups of rice, is in fact quite mild.
This simple addition transforms the rice, and to use the British adjective, makes it ever so moreish. Ironically, cardamom rice is not so strange as a dessert, but do give it a go in the savory arena.
Ingredients:
2 cups rice
2 Tbsp oil
2 tsp salt (flat)
1 tsp powdered cardamom
boiling water
Method:
Soak the rice at least 30 minutes before. Rinse well until water runs clear (because: arsenic).
In a pot, heat the oil. Add the cardamom and stir until fragrant. Add the drained rice and the salt. Stir for a short while, being careful not to break up the rice grains (because: long rice grains are beautiful).
Add enough recently-boiled water to cover the rice by about a finger's width.
Cover, reduce heat to the lowest setting, and allow to simmer and steam for 20 minutes.
Rice should be cooked through and fluffy at this stage. If not, give it another 5 minutes.
