Quarantine has turned into the longest weekend where every morning deserves a weekend breakfast. I found mini pita breads in the market and found this is one of the best ways to use them in a breakfast. As non-recipe recipe, I suggest the best ingredient combination, and you feel free to adapt quantity or variations as preferred.
Eggs and cheese go toether dreamily, and when the still-hot eggs are put on the cheese, it melts right in the sandwich. Add freshly sliced tomato and a mint leaf, and you've got yourself an express gourmet breakfast a la Arabian flavors.
Ingredients:
mini pita breads
scrambled eggs
cheese
tomato, sliced
mint leaves
Method:
Prepare the sandwich components before you cook the egg so it remains hot at time of assembly.
To assemble, open the pita breads, layer in this order: cheese, eggs, tomato, mint leaf.
Serve with piping hot sweet tea with a sprig of mint in it.
