1407. Joojeh Kabab


This is a farsi classic that I believe might qualify as fast food as it seems to be a popular street food in their district. Chunks of chicken (I used boneless skinless chicken breast but bone-in chicken thigh chunks can also be used) are marinated in an onion, saffron, and yogurt mixture overnight.
Next day, they are charred on a grill and are great served with some barberry rice and a simple salad.


Ingredients:

450g chicken breasts
1/4 cup apple vinegar
1/4 cup saffron-infused water
1 onion, finely grated
1/2 tsp turmeric
1/2 cup plain yogurt
1 tsp salt and pepper
1/4 cup olive oil


Method:

mix all the ingredients except for the chicken in a non-reactive bowl until smooth. Add the chicken chunks and toss to coat completely. Refrigerate covered overnight.
Next day, take out the marinate bowl of chicken and leave on the counter until room temp.
Fire up the grill to medium-high heat. Grill the chicken either on skewers or as is until charred all over and cooked through.
Great served with some barberry rice and a simple salad..
