These lotus twix bars are a three-ingredient home made chocolate bar. Lotus, speculoos, and biscoff are all used interchangeably, depending on where you live in the world. It is like peanut butter, but with no nuts, and a distinctive mix of spices I associate with winter, but have exploded into popularity that it is consumed year-round.
Butter shortbread biscuits are what is used here because of their sturdiness and butteryness. This is not a hard recipe in the sense that you must stick to the ingredients. Take the idea a nd fly with it. Tea biscuits with almond butter and dark chocolate? Ginger snaps with pistachio paste and white chocolate? Why not.
Ingredients:
8-10 shortbread biscuits
200g lotus spread (half a jar)
250g milk chocolate
Method:
Spread lotus cream over each piece of biscuit and use a knife to smooth it out. Freeze for 30 minutes.
Melt chocolate in the microwave at 30 second intervals (stirring in between) until it fully melts.
Dip lotus biscuits into chocolate and swirl around to coat completely. Transfer to baking paper and use a fork to make indents on the top
Refrigerate or leave on countertop to set them before consuming.
