So these peaches were so ripe that I felt no need to further sweeten them. Keep in mid that cold food mutes the sweetness, so you might want to prepare and cool some simple syrup on the side to sweeten your sorbet as needed.

Method:
Slice the ripe peach and lay in single payer on a silicone-lines tray and freeze solid overnight.
Next day, place the frozen peach slices in a high-powered food processor and blitz until a sorbet is formed. This will take a few minutes, keep going until it smooths out. Taste for sweetness and if necessary, sweeten as desired with some cold sugar simple syrup. Scoop and serve immediately.
