Although many people grew up on these loqum cookies and remember them in their childhood with great affection, I did not. I literally tasted this combination last week for the first time and was blown away. I did not expect it to be that good. It was delicious, and dangerously addictive.
Loqum is Turkish delight. Before the fates turned on Syria, it was the best place to get loqum and baklawa from. Now Turkey is closing the gap, and as much as I love Turkey and their products, Syrian delights had a distinct association to them that just lands differently. So, this is a popular combo in Lebanon, and I think the rest of the Levant. I did not come across it in Iraqi culture, but it might have been, just not as popular. All it is, is plain tea biscuits sandwiching a squished piece of delightful loqum. Two ready made staples for an instant treat.
Ingredients:
plain tea biscuits
loqum squares
Method:
Using your fingers, squish a piece of loqum flat to about the size of your tea biscuit. Place the loqum between two tea biscuits, and place the sandwich flat on your fingers just above your palm. Flat fingers are essential to not break the biscuits. Using your other hand of flat fingers, press on the sandwich and twist it to seal. Repeat for the rest of the quantity.
