What do you make with a fillet of salmon in the freezer, a packet of dried mushroom in the cabinet, and a carton of cream in the refrigerator? This, you make this. If the potato takes too long, swap it with pasta or rice.
I had a boiled potato in the refrigerator, and it was the best combo ever to make as a smashed roasted bed for the salmon. The recipe can be made as easily for one as it can for eight people. Simple doesn't come much better than this.
Ingredients:
fillet salmon
butter
dried mushroom
cream
smashed potato (or rice or pasta)
salt and pepper
Method:
Prepare your base (smashed potato or rice or pasta).
Make the mushroom sauce: rehydrate the dried mushroom by soaking in hot water for a few minutes, drain and combine the mushroom and cream in a saucepan. Season with salt and pepper and bring to a simmer until desired thickness is achieved. If too thick, you can thin it out with some of the soaking mushroom water.
Cook the salmon fillet by seasoning with salt and pepper and baking for 8-10 minutes in a hot oven.
To assemble, plate your potato or rice or pasta, topped with the baked salmon, and the mushroom sauce.
