This is a fun and new way to present chocolate mousse or pudding, using tofu. It was not my favorite especially compared to the original butter- and egg-laden version, but I thought I'd share anyway in case it tickles anyone's fancy.
A mini-food processor is key here, and all ingredients are added and mixed for the resulting "mousse". It is recommended to refrigerate for an hour or two before serving.
Ingredients:
340g silken tofu
1 tsp vanilla
1 heaped Tbsp honey
150g dark chocolate, melted
1 Tbsp cocoa powder
Pinch salt and some flaky salt, for topping
Method:
Add the tofu to a blender and blend until smooth.
Add the melted chocolate, cocoa powder, salt and vanilla and blend again until completely smooth.
Add to your serving dishes, refrigerate for 30 mins - 1 hour, then serve.
