1751. Chicken Salad Sandwiches


We already have great sandwich filling recipes here on MCW that are staples to any gathering or park outings: egg sandwich and tuna sandwich. Now we can gratefully add chicken sandwiches to this already fantastic repertoire and call it a day. 
Adding sour cream might feel like it's an unnecessary extra ingredient, but it actually improves the recipe, making it less greasy by cutting down on the quantity of mayonnaise we'd have to sue without it.


Ingredients:

500g cooked chicken meat from 1 large store bought rotisserie chicken 
1 green onion , finely sliced
3/4 cup walnuts , roughly chopped
1/4 cup finely chopped cornichon
2 Tbsp finely chopped dill
2/3 cup mayonnaise
2/3 cup sour cream 
2 tsp Dijon mustard
2 Tbsp lemon juice
1/2 tsp onion powder 
1/4 tsp garlic powder 
3/4 tsp salt
1/4 tsp black pepper
salted butter , for spreading on bread
20 slices white sandwich bread


Method:

Shred the chicken as finely as you can. 
Mix the mayonnaise, sour cream, Dijon mustard, lemon juice, onion and garlic powders, salt and pepper in a bowl until smooth – use a whisk if needed.
Pour resulting sauce over the chicken. Add the chopped onion, walnut, cornichon, and dill. Stir until combined.
Spread bread with butter. Spread with filling, remove crusts if desired and cut in half.
