Everyone knows a classic caprese is made of fresh mozzarella, tomato, and basil. I switched things up a bit and made a fresh and vibrant coriander paste instead of traditional basil pesto for this toast. Excellent decision.
By now, most of us have been made aware of something called "forever chemicals" and heavy metals in our food and water. Apparently, rumor has it in the world of science that coriander is a heavy metal detoxifyer and can help the body rid itself from those nasties.
Ingredients:
For the coriander paste:
1 small bunch fresh coriander
1/2 tsp salt
1/2 lemon juice
1/4 cup olive oil
For the toast:
1 slice sourdough bread, toasted
1 ball fresh mozzarella
4 cherry tomatoes, halved
Method:
Put all the ingredients for the coriander paste in a mini-blender and blitz till homogenized. Prepare the toast by smearing some on the paste over the bread, top with sliced fresh mozarella and tomato, and an extra drizzle of the coriander paste.
