My sister bought a small packet of delicious but overpriced cookies, which had the list of ingredients clearly printed on the packet. This led me to trying my hand at replicating it, using experience as educated guesses as to the measurements and method.
The result was not exactly the same, but it was very pleasing. The secret lay in chickpea flour, which I just made (very loudly) with processing dried chickpeas in a spice grinder.
Ingredients:
2 cups oats
1/2 cup chickpea flour
1/2 cup raisins
1/2 cup cashew
1/2 tsp cinnamon
80g melted butter
1/3 cup date molasses
Method:
In a food processor, blitz the oats until you have a fine flour. Add the chickpea flour, raisins, cashew nuts, and the cinnamon. Process until fine. Add the melted butter and the date molasses. Blitz until you have a dough.
Form marble-sized balls from the dough. Please one ball on a parchment lines baking sheet, place a small parchment over it and press down using a glass to flatten to about 2-3 mm thick. Repeat with the rest, likely working in batches.
Bake in a preheated 350F oven for 6-7 minutes, just until a golden bonze appears on the edges of the cookies. Allow to cool completely to crisp up, and store in an airtight container for up to a week.
