1926. Comte Cheese Crackers


Snacking is a multi-cultural, and a multi-billion dollar industry. While store-bought goodies are often designed to make you addicted to the product, I can safely say that this homemade savory cheese cracker is among the best I've tasted and is just as addictive (without any of the chemical and synthetic nasties). Totally delectable just on their own, you can also use them as a vehicle of cheese. I prefer them more towards a deep golden brown; they become so light, crispy, and intense in flavor. I cut them about 2 millimeters in width, so get about 60 crackers from one recipe.



Ingredients:

50g soft butter
100g grated comte cheese
100g flour
20g sesame (and poppy seeds)
pinch of cayenne
salt and pepper
2 Tbsp cold water



Method:

Mix with your fingertips all the ingredients except the water to combine. Add the water and knead to form a dough. Put the dough on a plastic sheet cling film and form a rod. Roll the plastic around the rod and tighten the ends to get a nice clean shape. Refrigerate for at least two hours to firm up. 
Preheat oven to 350F and thinly slice (2 millimeters) the rod into medallions. Bake in the preheated oven for 15 to 17 minutes, depending on how golden brown and crispy you want them. Serve fully cooled.
