While online grocery shopping the other day, I accidentally ended up with a bagful of green chili. The recipe I had gotten it for required only two chilies, so I decided to process the rest into a tobasco alternative of homemade hot sauce.
I had green chilis, but obviously red would work here too. Having used all green Thai chili, the hotsauce was very spicy. You could incorporate milder forms of chili and play around with the spice level.
Ingredients:
4 cups spicy peppers
2 tsp grated garlic
1 tsp salt
1 tsp sugar
1 1/2 cups white vinegar
1/2 cup water
Method:
In a blender, process the chilis with the water and vinegar until pureed. Put in a saucepan and add the garlic, salt, and sugar. Bring to a boil, then cover and simmer for 20 minutes.
Strain through a sieve to separate the sauce from the seeds and solids. Can the sauce for longer-term storage. Separation of the sauce is normal, just shake it up before use.
