1924. Vanilla Honey Sable Cookies


Sable cookies are a form of shortbread biscuit, a treat baked with butter, sugar, and flour as the main components, without any leavening agent. I have an adorable wooden squirrel mold to use, but you can just as well roll up the dough, refrigerate, then cut into quarter inch medallions.



Ingredients:

120 g butter, softened
40 g powdered sugar
60 g dark brown sugar 
35 g light honey 
1 medium egg 
½ tsp vanilla 
290 g flour
Pinch of salt
Optional: brush with warm honey syrup (50 g honey + 20 g water) for a golden sheen.



Method:

Cream butter, powdered sugar, and dark brown sugar until smooth and fluffy.
Mix in the egg, honey, and vanilla until well combined.
Add flour and salt, mixing just until the dough comes together.
Wrap the dough and chill for at least 1 hour, or overnight for easier molding.
Lightly flour the wooden molds, press in portions of dough, level the surface and gently release.
Place cookies on a lined baking tray and chill again for 15–20 minutes while preheating the oven to 350F.
Bake for 16-18 minutes, until the edges are golden brown.
Brush warm cookies with honey syrup for a golden sheen if desired.
Let cool completely so the molded patterns set clearly.
