Toast is always the fall back and go-to when either in a cooking rut or in need of an almost instantaneous meal. It can be sweet or savory, simple or elaborate. This roasted pear toast is on the simpler side, but looks elegant and elaborate. The goat cheese contrasts perfectly with the naturally sweet pear, which the roasting only further accentuates. Also a nice touch is the halal bacon rasher, seared and crisped to add both flavor and texture.
Ingredients:
Slice of sourdough
2 Tbsp goat cream cheese
1-2 beef bacon rasher
1 pear
salt, pepper, olive oil
Method:
Lightly fry the sourdough slice in olive oil until golden on both sides.
Cut the pear in half; remove the core. Slice thinly, maintaining its shape, and roast at 400F for 15 minutes.
Sear the beef bacon rashers until crispy.
To assemble, smear the goat cream cheese over the bread, top with the cooked beef bacon then the roasted pear. Add a final touch of salt and pepper and serve warm.
