1970. Grilled Courgette Toast

Complimentary to the last post on toast, here is another stunned, with a more savory flavor palette. Done correctly, the humble courgette is an absolute delicacy. Here, it is scored then grilled to gain a beautiful color and soften the inside to sheer silk. This tops some ricotta and an optional sprinkle of caynne pepper finishes it off.




Ingredients:

sourdough slice of bread
ricotta cheese
courgette
salt, pepper, olive oil



Method:

Lightly fry the sourdough slice in olive oil until golden on both sides.
Cut the courgette in half; score diagonally making sure not to cut all the way through. Sear in a pan with olive oil, or brush with oil and grill until a deep golden brown on both sides.
To assemble, smear the ricotta cheese over the bread, top with the grilled courgette. Add a final touch of salt and pepper, and cayenne, and another drizzle of olive oil and serve warm.
