2106. Sicilian Tuna Sandwich

Tuna sandwiches are popular in almost every culture. This Sicilian version is typically Italian, yet also completely novel with fried aubergine, fresh mozzarella, and a tomato paste dressing. Using canned tuna fillets also helps keep the sandwich more together.

Ingredients: Makes 2 sandwiches

2 small focaccia or 2 small ciabatta
1 small aubergine, thinly sliced and fried
1 large mozzarella or burrata
180g tuna fillets in olive oil
2 Tbsp of extra virgin olive oil
½ tsp of oregano
Juice of ½ a lemon
1 heaped Tbsp of tomato paste

Method:

Cut open the bread and toast lightly. In a small bowl, whist together the tomato paste, lemon juice, oregano, and olive oil. Slather this dressing on the inside of your sandwich bread. Proceed to build the sandwich by layering with the fresh mozzarella, fried aubergines, and tuna fillets. Consume immediately.
