96. Chickpea Salad


Canned food is so undervalued. A well-stocked pantry, paired with a few staple fresh produce, can surprise you in their outcome. Canned chickpeas are great. No need for overnight soaking, nor hours of boiling.
Simply open the can, drain, rinse, and you're ready to go.
This is a simple salad that is not only delicious, but also excellent if you are trying to monitor your calorie intake. Chickpeas are low in fat, high in dietary fibre, and a good source of protein. Paired with simple vegetables, this makes the perfect accompaniment or even a light meal on its own




Ingredients:

1 can chickpeas, drained and rinsed
1/2 red capsicum, diced finely
1/2 cup chopped parsley
1 large green onion, chopped
2 small celery sticks, chopped
1/2 lemon, juice
1/2 tsp salt
4 Tbsp olive oil


Method:

Simply toss all the ingredients in a bowl.
Let sit about half an hour to allow the flavors to develop.
Serve as an accompaniment or as a light meal on its own.
