76. Turkish Aubergine Pilaf


I picked up this wonderful little Turkish Cuisine cookbook at the airport returning from Istanbul, and I'm so happy that I did!
It's not perfectly edited, like something might be missing from the ingredient list that is mentioned in the method, or the other way around, and there are some spelling errors, but you clearly get the gist of the recipe, and the quality of the paper and full color photos is incredible.
Out of curiosity, I searched for this book on Amazon and it is available! (here)






Ingredients:

2 aubergines, cubed medium size
4 courgettes, cubed medium size
3 jalapenos, slit, seeds removed
1 large onion, finely chopped
2-3 tomatoes, finely diced
2 cups rice, rinsed, drained
oil
1 tsp salt
1 tsp sugar
1 tsp alspice


Sauteed onions and tomato, drained rice, alspice and sugar and salt.



Fried jalapenos, fried aubergines, fried courgettes.


Method:

Microwave the aubergines for 5 minutes, then fry them in hot oil until browned. Set aside.
Microwave the courgettes for 5 minutes, then fry them in hot oil until browned. Set aside.
Microwave the jalapenos for 3 minutes, then fry them in hot oil until browned. Set aside.

Saute the onions in 3 Tbsp oil over medium-high heat until transparent.
Add the tomatoes and keep stirring until most of the water has evaporated.
Add the drained rice, the salt, sugar, and alspice.
Stir gently to evenly distribute all the ingredients.
Add boiling water until the rice is just covered by the water.
Immediately lower heat to low, cover, and leave for 20 to 30 minutes.

By now all the water should have been absorbed and the rice puffed and cooked.
Gently stir in the fried vegetables and serve.
Alternatively, serve the rice topped with the fried vegetables.
