566. Mango Fruit Leather


It can't get simpler than this: a one ingredient candy.

An all-natural, preservative-free, sugar-free, and chemical-free fruit rollup, aka fruit leather.
It's basically a lawless non-recipe: puree ripe fruit to a pulp, spread as evenly as you can on a silicone baking mat, and dry out for a couple of hours at a low setting oven.
I used mango, but infinite possibilities immediately jumped to mind: apricot, cherry, strawberry, mixed berry, kiwi, apple...
Hows about combos? Stawberry-banana, mango-passionfruit, peach-raspberry...
Well, this mango fruit leather could be a start to an interesting road indeed.


Ingredients:

3 cups chopped ripe mango


Method:

Peel and chop the ripe mango.
Puree in a food processor.
Spread as evenly as you an in a thin layer over two silicone sheet lined baking trays.
Bake at 180F for 4-6 hours, depending on the thickness of your fruit layer.
If your oven tends to have hot spots, rotate the pan every hour or two.
When completely dried out, press a parchment sheet over the fruit leather.
Invert the fruit leather so the parchment is down and the silicone is up.
Peel off the silicone the roll the fruit leather and the parchment together.
Cut into rolls and store rolled up in a humid-free container.
