827. Breakfast Healthy Banana Split


This is a breakfast version with smart healthy swaps of the famous banana spit dessert. A banana split is an ice cream dessert where a banana is split in half lengthwise, and three balls of ice cream are put between the halves (traditionally chocolate, vanilla, and strawberry). The lot is topped with copious amounts of whipped cream, chocolate sauce, and strawberry sauce, and a final sprinkling of flaked almonds.

826. Aubergine Chips with Coriander Cashew Pesto


I can't imagine why anyone would hate aubergines. There's really no wrong way to cook it. Case and point: this recipe is as simple as it gets. Slice the aubergines and either fry or bake them to a crisp. The fresh and vibrant coriander cashew pesto serves as the dip.

Ice cream for breakfast seem to be taking off! The recent boost in the healthification of so called naughty foods is finding a firm fan base. These breakfast popsicles are made up of natural yogurt lightly sweetened with honey, and swirled with a touch of jam and granola chunks.

With this magical new way of making a no-churn ice cream, I want to throw out my ice cream maker!
All it takes is whipping cream and a can of sweetened condensed milk, plus whatever flavorings you want.
Today's is a favorite of mine: espresso and chocolate shards.

Fresh mozzarella is a completely different beast from the packaged mozzarella we buy for our lasagnas. If you don't live somewhere they make it locally and sold the day of making, your next best shot is getting the "fresh"ones sold swimming in a package of its own water.

This is a perfect quick, easy, and nutritious Summer meal. Quick cooking chicken breast fillets are thrown in a griddle pan while a fast salad of olives, tomatoes, feta, and mint or basil is tossed together to top the cooked chicken.

My pasta salad is a favorite and is highly requested and often copied. It works great in Summer barbeque gatherings as it does in an off-season craving. It is full of vegetables and herbs, and this version differs in that the vegetables are roasted.

There are some kitchen basics that seem just too complicated to make due to their arduous and finicky procedure which one must adhere to that it's just not worth while to make unless it's for a momentous occasion.
Think: lemon curd, creme patissiere, choux pastry and the like. So when I find a short cut yielding perfect results, I take it.

It was so much fun preparing this serve-yourself baked potato bar. The only cooking involved (unless you make your own pulled meat or shawerma) is baking the potato, which is as easy as wrapping in foil and throwing in an oven. All the rest is prep work.

816. Jamaican Jerk Chicken with Mango Salsa


What a successful dish this was! I could probably write a book on 365 Roast Chicken recipes for every day of the year and not tire. Jerk chicken is a Jamaican concoction, and what makes it a jerk is its marinade. The contrast between the intense savory chicken and the freshness of the mango salsa is phenomenal. It might seem weird, but it so works.

Eid Al-Fitr Mubarak to all my Muslim brothers and sisters in the world.

If you have ever gone to a fair in the height of Summer and bought a punnet of fresh strawberries to dunk in sugar or cream, you will certainly appreciate this dessert. A bowlful of ripe, red, sweet-tangy strawberries served alongside some whipped cream cheese frosting to dip at your leisure is a must when these berries are in season.

Spirulina: What Is It?

I was inspired by the wonderful folks at Nuts.com to share a non-sponsored infographic about a superfood called Spirulina. I have been curious about spirulina for a while now and want to start adding it to my smoothies for added nutritional benefit. It is very rich in protein and antioxidants, and is included in the diet of astronauts to keep them healthy and strong!
