I have heard for years and years how this Iraqi date-egg scramble was a revered part of many Iraqis' childhood, but strangely enough it was never a part of mine. I decided to give it a go and give little humans a taste of Iraqi culture that was foreign even to me. The result?
Absolutely loved by the little humans. Big humans were somewhat taciturn to the experience, but the appeal was certainly not lost. here's the recipe, just in time for the weekend.
Ingredients: serves 2
4 mejdoul dates
knob butter
3-4 eggs
pinch cinnamon
bread, to serve
Method:
Set a pan over medium heat. De-seed and chop the dates into medium chunks.
Render the dates and butter in the pan until the dates have really softened.
Sprinkle lightly with salt and a pinch of cinnamon.
Crack the eggs in a bowl and give them a light scrambling before pouring over the dates.
Cook until done to your liking and serve immediately with bread and tea.
