1474. Gnocchi



With fresh gnocchi readily available in the refrigerators of most grocery aisles, home made gnocchi is not something you really need to master to prevent yourself from going hungry. However, seeing how simple it is to conquer, it would be almost criminal to not give it a go as a weekend project.Put simple, you mix mashed potato, flour, and an egg to form a dough. Roll into rods, cut into digits, roll against the back of the fork, and you're done! To cook it, just boil it in salted water until it floats, which is literally under two minutes. Then sauce it as you would any pasta.




Ingredients:

2 medium potatoes
1 cup four
1 large egg
1 tsp salt
extra 1/2 cup flour for rolling




Method:

Peel potatoes, cut into large cubes and boil until tender. Drain, cool slightly and mash with a fork or potato masher.
Combine the mashed potato, flour and egg in a clean working surface. Knead until dough forms a ball. Shape small portions of the dough into long "snakes". On a floured surface, cut snakes into half-inch pieces and roll against the back of a fork to form indents.
To cook it, just boil it in salted water until it floats, which is literally under two minutes. Then sauce it as you would any pasta.
