Yet another roast chicken recipe may not be exactly what you seek, but if you have a slow cooker, take it out and cook this now.Five hours on slow, or three hours on high, the slow cooker ensures your chicken is moist and flavorful through and through. Barely five minutes of hands-on time, you would also need to color the chicken in the oven at the end of cooking.
Ingredients:
1.5kg whole chicken
1 tsp dried thyme
1 tsp dried oregano
1 tsp salt
1/2 tsp black pepper
3 Tbsp olive oil, plus extra
3 garlic cloves , grated
2 large lemons , all zest + all juice
1 Tbsp cornflour mixed with 1 Tbsp water
Method:
Mix dried herbs and seasonings with olive oil, grated garlic, lemon zest, and lemon juice.
Spoon most of the rub under the skin, and rub the rest all over the chicken.
Stuff used lemon inside the chicken.
Put rack inside slow cooker, place chicken on top.
Slow cook 5 hours on low or 3 hours on high.
Remove chicken from slow cooker, and bake in a preheated 450F for 10 min.
Spoon over pan juices, then serve with Lemon Sauce!
To make the lemon sauce, pour all slow cooker liquid into a saucepan, add cornflour / water mixture. Mix. Bring to simmer over medium high and cook until liquid thickens to thin syrup. Adjust salt and pepper to taste. Pour into jug and serve.
