Zaatar and cheese is a classic combination with endless varieties. This is a recipe for fresh zaatar leaves combined with akawi cheese and a bit of melty mozzarella into a sambusak. Fresh zaatar leaves are also known as fresh oregano.
Ingredients:
30 sambusak leaves
1 cup akawi cheese, finely chopped
1 cup grated mozzarella
1 cup fresh oregano leaves, loosely packed
1 Tbsp nigella seeds, optional
oil, to fry
Method:
In a bowl, mix the two kinds of cheese with the fresh oregano leaves and nigella seeds to disperse.
Stuff each sambusak leaf with two teaspoons of the filling, and seal shut with a brush of water.
Fry and serve immediately.
Can also be frozen uncooked and fried directly from frozen.
