This is the first time I use buckwheat. Although coming from wheat, it has many health benefits that I preferred making an oat-less granola just to let it shine.
I also discovered I had an unknown affection towards nearly-burnt golden raisins. They transform into a wonderfully bitter and sour chewy fruit, almost like a dehydrated sour plum.
2 cups buckwheat
1 cup sunflower seeds
1 cup cashew
1 cup golden raisins
1/2 cup honey
1/3 cup olive oil
Method:
Toss all the ingredients like a salad in a large bowl until you make sure everything is evenly covered. Spread the mixture into a single layer on a parchment lined large baking sheet. Bake in a preheated 350F oven for about 30 minutes, tossing halfway through. Let cool completely on the parchment paper then store in an airtight jar. Serve over greek yogurt with fresh fruit as desired.
