In case you wanted to make a more substantial meal of last post's express egg rice, these express rice paper shrimps are it.
Literally three ingredients and you're set. Some soy sauce on the side is essential.
Ingredients:
clean shelled raw shrimp
rice paper
coriander leaves
soy sauce, to serve
Method:
Dunk the rice paper in water and lay flat on a chopping board. Place a shrimp on the bottom half of the paper, and a coriander leave over it. Season lightly with salt and pepper, then fold over the paper to cover, and pinch the corners together. Repeat for remaining shrimp. Spray lightly with oil and airy fry for 15 minutes at 400F. Serve with a side of soy sauce.
