1962. Walnut Soup

Walnut soup may sound unconventional but once you try it you'll be thinking why didn't I try this sooner? It is reminiscent of mushroom soup in both looks and taste but also has its own distinct profile. Now I'm thinking of exploring other nut soups.



Ingredients:

250g walnut
1 clove garlic
1 liter chicken stock
½ tsp thyme
1 Tbsp vinegar
salt and pepper
½ cup cream


Method:

Grind the nuts and garlic until almost a paste. Add to a pot with the thyme and broth; bring to a light simmer for 15 minutes, stirring so it does not scald at the bottom.
Season with salt and pepper to taste, and add the vinegar; blend until smooth.
Stir in the cream just before serving.
