1960. Date Caramel Dip

A thick, almost toffee, caramel dip with fresh crunchy apples is a delight. This version falsifies the caramel into a healthier version using only dates and cream (and salt). The result is pleasing and the kids loved it. I used regular cream because after trying the vegan version with coconut cream, I found this carnivore version better.


Ingredients:

1/2 cup pitted dates
1 cup cream
large pinch salt



Method:

In a cold saucepan, combine the dates and the cream. Slowly heat up to a light simmer, stirring and mashing all the while. Add the pinch of salt, and at this stage you can either beat manually or puree using an immersion blender.
Pour into the serving bowl and serve at room temperature with fresh apple wedges.
