This Lebanese sausage bake is an express meal that comes together in minutes and then the oven does all the work. The end result is a medley of grilled vegetables and sausages in a wonderful self-saucing broth without having to add any additional liquid.
The addition of pomegranate molasses halfway through baking is optional, but highly recommended. The dish reminded me of a ratatouille, but with sausages.
Ingredients: serves 4
500g Lebanese sausages
1/2 sliced red capsicum
1/2 sliced green capsicum
1 sliced onion
2 tomatoes, cut into wedges
2 potatoes, cut into wedges
2-3 Tbsp olive oil
salt and pepper
1 tsp oregano
1 tsp paprika
3-4 Tbsp pomegranate molasses, optional
Method:
Combine sausage and vegetables into an oven dish, drizzle with olive oil, season with salt, pepper, oregano & paprika.
Bake at 400F for 1 hour or more until potatoes are tender & veggies are cooked, turning half way. Optional drizzle with pomegranate molasses at the half way mark and upon serving.
*No need to add sauce or water, as the juices come out of the veggies & sausages & create its own sauce.
*Serve with bread or rice.
