Pogaca Turkish Feta Buns are popular savory, soft pastries commonly served for breakfast or as a snack with tea in Turkey and surrounding regions. One of the may overlaps between Ottoman and Arab cuisine is cheese stuffed pastries.These tender rolls are often filled with feta cheese and parsley, but may also include olives or herbs. They are typically topped with sesame or nigella seeds.
Ingredients:
6 cups plain flour
2 Tbsp yeast
1 Tbsp sugar
2 Tbsp salt
1 cup warm milk
1 cup warm water
1 cup oil
Filling:
400g feta cheese, crumbled
400g mozzarella cheese, shredded
1 small bunch parsley, chopped
Method:
Start off with 3 cups flour, add the yeast, sugar, salt, milk, water and oil. Mix well then add remaining 3 cups flour 1 by 1 kneading in between. Knead for 10 min until soft and elastic. (This process is easier if done in a stand mixer)
Rest in a warm place for 1 hour or until doubled in size. Portion into 2, then each portion into 12. (24 pieces total). Flatten each one out into a circle, fill with cheese mix and close up into a ball. Place seam side down onto a baking tray, brush with egg wash, top with sesame seeds and bake in preheated 350F oven until golden.
To make the filling: combine the cheeses and parsley. Alternatively you can fill with mince mixture or spiced potato mixture, sujuk & vegies with cheese, pizza filling & more.
