2001. Merguez Toast

This cheesy merguez toast is a delicious and filling meal, especially with a load of lightly seasoned rocket dressed with lemon. Raw merguez, removed from the casing and mixed with some cheese, is pressed on a sourdough slice and seared upside down in a hot pan. It finishes off cooking in the oven for 5 more minutes.



Ingredients:

sourdough bread slice
merguez sausage
mozzarella cheese
rocket leaves and lemon, to serve



Method:

Lightly toast the sourdough slice. Remove the merguez sausage from the casing, discard the casing, and mix the filling with some shredded mozzarella then press it onto one side of the sourdough. Sear, meat-side down, in a hot pan until golden brown. Flip the toast to meat-side up then bake in a preheated 350F oven for about 5 minutes. Serve hot with ample rocket leaves topped with slat and lemon juice.
