This is a semi-from-scratch recipe where the tortellini is bought ready made but the sauce is home made. Creamed spinach is always a side dish I cannot resist. Some versions are so adulterated that the nutritional benefit is greatly reduced. This version is simple and both nutritious and delicious. Served over tortellini, it accounts for a full meal.
Ingredients:
1 packet fresh tortellini
olive oil
1 cup frozen spinach
2 cloves garlic
1/2 cup cream
1/2 cup freshly grated parmesan cheese
Method:
Fresh pasta takes 5 minutes to cook, or less. Cook it after the sauce is made.
To make the sauce, saute in a bit of olive oil the thawed and drained spinach, with the grated garlic. Add the cream to loosen a bit, and the parmesan. Stir for a minute or two more, then set aside.
Cook tortellini pas per packet instructions. If the sauce is too thick, add a couple of tablespoons from the pasta water.
Serve the sauce over the tortellini, topped with extra freshly grated parmesan and freshly grated pepper.
