1983. Tomato Sauce Ramadan Pasta

There are some recipes that are created according to inspiration, craving, and available ingredients. I feel this tomato sauce pasta is one of them, being the result of a Ramadan craving for a saucy pasta. It's got two types of tomato, and the addition of cream qualifies it as transformed from red to pink. A health backgroud of onion and garlic, and a generous finishing of parmesan.


Ingredients:

450g dry pasta
1 large onion, chopped
3 cloves garlic, grated
2 Tbsp tomato pasta
1 Tbsp pul biber, optional
1 jar (400g) tomato sauce
1 bouillon cube, crumbled
1 tsp powdered garlic
2 tsp oregano
1.5 cups cream
1 cup grated parmesan



Method:

Boil the pasta according to package instructions in a large pot. Meanwhile, make the sauce. In another pot, saute in some olive oil the chopped onion until soft. Add the minced garlic and stir for a moment longer until fragrant. Add the tomato pasta, pul biber, garlic powder, and oregano. Stir for a minute or two longer. Add the jar of tomato sauce and stir to combine. Lastly, add the cream and parmesan, and lower heat if necessary so it will not boil vigorously.
When the pasta is done cooking, save a cup of the water to thin out the sauce if necessary, then add the drained pasta to the sauce. Serve hot with an extra sprinkle of parmesan cheese.
