This is another recipe that plays on the Palestinian musakhan theme but differs through the addition of fresh zaatar leaves. The flavors are as promised: bold and gutsy. A boatload of onion, sumac, lemon, garlic, and fresh zaatar make up the flavor profile.
Ingredients:
6 red onions, sliced
salt and black pepper
3 Tbsp sumac
1/2 cup olive oil
3-4 cups fresh green thyme
1 whole chicken, cut up
1 Tbsp chicken spices
1 tsp Aleppo pepper or paprika
1/4 cup lemon juice
1 Tbsp grated garlic
2–3 Tbsp pomegranate molasses
Method:
In a roasting pan, combine the sliced onion, zaatar leaves, sumac, salt and pepper, and olive oil. Rub the ingredients together to incorporate flavors. Lay the chicken, skin side up, over this and rub the chicken with more salt, pepper, olive oil, chicken seasoning, paprika, and garlic. Drizzle the lemon juice and pomegranate molasses over the lot and bake uncovered in a preheated 400F oven for about 1 and a half hours. Serve with a side of rice or bread.
