Pickle juice chicken bites are bite-sized pieces of chicken breast marinated in dill pickle brine to keep them incredibly tender and juicy, then breaded and cooked to golden perfection. They can be baked, air-fried, or pan-fried for a quick and flavorful meal or appetizer.
Ingredients:
750g boneless, skinless chicken breasts (cut into bite-sized pieces)
1–1.5 cups dill pickle juice (leftover brine from a jar)
1/2 cup flour
1 tsp garlic powder
1 tsp paprika
1/2 tsp onion powder
1/2 tsp salt & black pepper
Oil to fry
Method:
Place the chicken bites in a shallow bowl or ziplock bag and submerge them in the pickle juice. Marinate in the fridge for at least 1 hour (for a mild flavor) up to overnight (for a bold dill taste). Drain the chicken completely in a colander. Do not rinse; the brine acts as the seasoning. In a mixing bowl, toss the drained chicken bites with your flour and dry spices until evenly coated. Fry or airyfry the chicken pieces until cooked through and a golden brown.
