2013. Chicken, Cranberry, and Quinoa Salad

This salad is fresh, crunchy, and actually fills you up, it's not just a side salad that's there for decoration. Loaded with chicken, quinoa, sweet corn, tomatoes, cranberries, and parmesan, and a creamy basil dressing that is so good.


Ingredients:

4 cups arugula
1½–2 cups cooked quinoa or couscous
2 cups cherry tomatoes, halved
2 cups sweet corn (fresh or cooked)
2 chicken breasts, roasted + chopped
½ cup dried cranberries
½ cup pumpkin seeds
½ cup shaved parmesan

Creamy Basil Dressing:
1 cup fresh basil
½ cup mayo
½ cup greek yogurt
1 onion
1 cup buttermilk
juice of 1 lemon
slat and pepper



Method:

To make the dressing: Blend all dressing ingredients until smooth.
To assemble: Layer everything, drizzle with dressing, and toss.
Start with half the dressing, then add more as needed.
Note: this salad stores well, just keep dressing separate and toss before serving.
