This folded wrap/tortilla sandwich exploded all over social media as the newest and must-try trend. The best part about it as that it is completely and utterly customizable; savory or sweet, Western or Eastern, breakfast or lunch, it really doesn't matter.
This is a breakfast folded wrap containing some of my favorites: soft-scrambled egg, cheese, beef frankfurter slices, and of course some mushroom.
Ingredients:
1 large tortilla
1 large egg, scrambled
2 mushroom, sliced
1 slice cheese
1/2 frankfurter, cooked and sliced
hotsauce, optional
Use a sharp knife to cut a straight line into the center of the tortilla.
Place the individual ingredients in each quarter of the tortilla: cheese, egg, sausage, and mushroom. Drizzle with hotsauce if desired.
Fold your sandwich and grill in a hot pan on both sides.
Serve hot.

I know this might sound like a silly question, but how do you get your eggs so perfectly scrambled?

Not a silly question at all, it took me a while to learn that Scrambled Eggs are best cooked over medium low heat. This will take a few minutes, which is much longer than we are used to cooking Scrambled Eggs, but the result is soft and moist. I also use a rubber spatula to fold the cooked parts into the still-uncooked parts. Try to not stir too too much. Finally, the egg continues to cook even after you remove it from the heat, so remove it just before you think it looks ready so it does not overcook. Good luck!
