2034. Cypriot Cheese Borek Rolls

Fried finger food is practically irresistible by anyone I know. Many cultures have their version of cheese stuffed fried pastry, and this specific one hails from Cyprus.


Ingredients: Makes 14

1 large egg
100 g Turkish white cheese or feta
250 g halloumi, finely grated
25 g  fresh parsley, finely chopped
10 g fresh mint, finely chopped
½ tsp dried mint
½ tsp pul biber
14 triangular-shaped sheets of “üçgen yufka” filo pastry
500 ml oil, for frying


Method:

In a bowl, combine the cheeses, fresh and dry herbs, and the egg very well.
Place about a tablespoon of the filling in a line on the wide end of the triangular pastry, fold over the sides to enclose the filling, and roll into a cigar. Use some water to wet the tip and seal the borek.
Fry in hot oil until golden brown and bubbly. Serve warm.
