2030. Blender Balsamic Vinaigrette


Points just keep gathering up in favor of this recipe. Not only is this a delicious salad dressing, it also makes a good quantity that keeps perfectly in the refrigerator for a week or more. The secret may just as well be in the blended onion.


Ingredients:

1 medium onion, chopped
1/2 cup balsamic vinegar
2 Tbsp honey, maple syrup, or sugar
2 tsp dijon mustard
1 tsp sea salt
2/3 cup extra-virgin olive oil


Method:

Add the onion, vinegar, honey, mustard, and salt to a blender. Blend until smooth, scraping down as needed. While blending, slowly drizzle in the olive oil to emulsify. Taste and adjust if you'd like (more mustard for more spice). Sealed in a jar, this keeps well in the fridge for up to 2 weeks.
